Grade the nuts by size before cutting, because each head's cup and blade are set for one size. If your intake arrives in two main grades, the 12-head is available in a dual-size build: six heads for one size and six for the other, on one machine, with no cup changeover.
What broken and uncut rates should I expect?
At the cutting stage: under 3% broken kernels, falling below 1% when RCN is well graded and evenly steamed, and under 5% uncut nuts. Lowering the motor speed reduces the uncut share further, at the cost of some hourly throughput. Whole-kernel outturn after complete processing is a separate figure, measured after steaming, cutting, drying, peeling and grading.
